LUCKY 13 BEAN CHILI - DONNA RIVERS
In a 3 Gal. Stock pot - add: 2 tbs. Olive oil 12 links Villa Capri hot sausage - remove casings 3 cloves fresh garlic - crushed * Brown all the above together - crumble transfer to fry pan - cool - then crumble further - set aside.
In stock pot - Brown together the following: (DO NOT DRAIN) 3 ¾ lbs. Ground beef - 85% fat 1 lb. Ground pork 1 lb. Ground veal 1 lb. Meat loaf meat mix *crumble while frying - stir frequently on medium-high heat
Next add: The cooked crumbled sausage - (set-aside) 1 large diced vadalia onion 1 medium diced yellow onion 3 finely sliced green onions 1 medium diced red pepper 1 medium diced green peppers 2 diced Italian frying peppers 3 16oz bottles - Michelob Ultra Amber Beer *Boil on medium heat approx. 1 ½ hrs. until reduced - stir frequently.
With remainder of sausage drippings in frying pan - sauté 10 large sliced snow white mushrooms on low heat until tender - then add to stock pot. Add the following spices - as follows: 1 handful whole black pepper corns 3 handfuls Adobo Goya seasoning - (Red Top) 1 tbs. ground oregano 1 handful dry crushed red pepper 1 tsp. Coarse black pepper ½ tsp. Salt 4 tsp. Cayenne pepper 3 handfuls regular McCormick chili powder 3 handfuls McCormick hot Mexican style chili powder 4 handfuls Emeril’s Southwest Seasoning ½ cup Franks original hot sauce 1 16oz jar Chi Chi’s Medium Salsa ¾ cup fresh minced parsley
Add: 1 can Del Monte petite cut diced tomatoes w/zesty jalapenos 2 cans Campbell's Tomato Bisque Soup 1 10oz pkg. Frozen baby lima beans *Boil on low heat approx. ¾ hr. - stir often.
Drain all the following beans and add as follows: 1 can Goya Pidgeon Beans 1 can Progresso Black Beans 1 can Cora Fava Beans 1 can White Kidney Beans 1 can Goya Pinto Beans 2 cans Light Red Kidney Beans 1 can Goya Pink Beans 1 can Goya Small White Beans 1 can Goya Black Eyed Peas 1 40oz dark red kidney beans plus 1 15oz can dark red kidney beans 2 cans large butter beans 2 cans Old El Paso Traditional Refried Beans 1 7oz can Fiesta whole jalapeno peppers diced w/seeds *Simmer on low heat approx. 1 hour...
*Garnish with sour cream, taco cheese, minced chives and parsley.
*Sprinkle with Emeril’s South West Seasoning - if desired !
